It was Greek Night last weekend at my place, so of course, I rushed over to our favourite butchers, Market Meats, on West 4th to pick up some chicken breasts for my kebobs. If you haven’t been there, you must. Everything is local and grass fed, and there’s a great selection of gourmet items as well such as rubs and pastas. http://www.marketmeats.com/index.htm
I also made some greek salad, tzatziki sauce, pitas (store bought - sorry to disappoint) and greek style potatoes. I absolutely love these and wanted to share my marinade with you. It’s about 2 hrs marinating time, but worth every bite.
1 cup olive oil ( I lessen this depending how much meat I use. For two chicken breasts, cubed, I only used 1/4 cup)
1/4 cup freshly squeezed lemon juice
3 garlic cloves, minced
2 Tbsp. dijon mustard
2 Tbsp. dried oregano
1 Tbsp. chopped fresh thyme leaves or 1 tsp. dried thyme
2 Tbsp. chopped fresh parsley
1 tsp. freshly ground black pepper
1 Tbsp. chopped fresh rosemary or 1 tsp. dried rosemary
In a small bowl, mix together all the marinade ingredients. Pour over lamb, beef, poultry, or fish and marinate in the fridge for 1-2 hrs before cooking.
